What's for dinner?

I'm enjoying what's left of the week before I start my "diet" and I just cooked the most awesome dinner...

Pork roast with chutney, and mixed veggies.

I had never cooked pork roast OR chutney before, and now I'm wondering why the hell not, lol. That shit is GOOD!

What are you having for dinner?

Tonight was an unusual one actually. Did an infrequent vegetarian thing.

Nice fresh produce into a really giant salad, Jersey tomatoes, hearts of romain, scallions, cucumbers, red onions, seasonings, topped with Caesar dressing. Toasted roll on the side lightly-buttered, some chuncky apple sauce, and opened a bottle of chilled White Zinfandel.

Was quite tasty and a nice change!

How I make them is, I take a big bag of frozen hash brown potatoes and dump them into a non-stick baking pan.
I mix in some condensed cream of mushroom soup from the can,
add extra mushrooms,
mix in some chopped onion
various spices, garlic, a pinch of basil and a pinch of parsely flakes,
a few good smatterings of tabasco sauce to liven things up
top it with a thin layer of more cream of mushroom soup,

Then bake it in the oven til it's nice and brown and the edges are crispy.

Damn it's good.

You can also mix in feta or ricotta cheese with it, or pretty much any type of cheese will work really, whatever you like.
