Here's a few of my favorites.
-------------------------------- Healthy Delicious Tacos My favorite meal is healthy tacos w/ home made hard taco shells (I make enough at a time for several meals) Do not eat store bought trans-fatty taco shells! One package of extra-lean ground turkey (or 93% fat free or better ground beef). Brown meat on medium stove heat for a few minutes, then drain and rinse off fat in colander. Add back meat, turn heat on low, add 2/3rds cup of water and one packet (low sodium) taco seasoning, mix and chop up meat a bit. Cook in the fry pan for less than ten minutes chopping up mixture in fry pan with spatula a bit and turning mixing several times. Makes enough for approx 10 tacos. Now you make your own crispy shells from store bought flat whole wheat or ezekiel tortillas. Buy some whole wheat torillas in the refrig. section of the supermarket or better yet some Food For Life brand Ezekial Sprouted Grain Tortillas in the frozen section (they come out crispier), coat each one with a few olive oil sprays & a shake little salt on each. Now bake for 15 minutes at 325 degrees draped over a metal taco shell rack or over draped over two slats of the oven shelf and hanging down to make the shape and crispiness of taco shells. Store the extras in tupperware in the refrigeraor. I top the tacos with some store bought lettuce shreds & some chopped bits of a small tomato. You can add salsa to the meat when you re-heat it and also slightly microwave-melted fat free cheese shreds from the store on top if you wish. Also- use that pre-cooked taco seasoned meat to eat in other combos during other meals, for example: - As a meat topping to the home-made pizza below - Stuffed in a whole wheat pita, kinda like a dry Sloppy Joe sandwich. - Stuffed in half a red/orange/green/yellow bell pepper that you heat in the microwave for 90 seconds - Mixed up with some red kidney beans and brown rice, kinda like a dry chili. Healthy Home Made Pizza One Food For Life Ezekiel Sprouted Grain Tortilla or whole wheat tortilla for the base , spray with a little olive oil spray, bake on foil in a baking tray or pan in a pre-heated oven at 375 for about five minutes until it gets a little crispy. Take out and add about 1/4 cup Ragu or other 100% natural (low fat, no high fructose corn syrup) pizza sauce to the tortilla with a spoon and add in about 1/4 cup of chopped red bell pepper pieces and chopped tomato pieces from a small plum tomato. Shake on a little bit of spices like dry parlsey flakes, and a little salt, pepper, Italian Seasoning and garlic powder. Then spread a 1/4 cup of shredded fat free mozarella cheese on top of that to make the cheese layer. For a topping I add 75 grams or so of the pre-cooked extra lean ground turkey spiced with low sodium taco seasoning that I usually use for the tacos on the very top. Then back in the oven to cook for about ten minutes at 375 until the cheese is melted nicely, take out, let cool for a few minutes, then eat. This was my first attempt at making a home made pizza and it was DELICIOUS! The pizza was really crispy and held together real nicely even when I picked up up and ate it with my hands! I am so friggin proud of myself, he he! Here is the nutrition breakdown: 278 calories, 3 g of fat, 31 carbs, 32 g of protein. Spaghetti (Squash) & Meatballs Make meatballs first 1 lb. of meat (lean beef or turkey) One egg or one egg white 1/4 cup of wheat bran or one crumbled piece of whole wheat bread. Handful of Parlsey Flakes Little bit of salt, pepper, onion and garlic powder Mix up meat and other ingrediantst real good, form into 12 or so medium sized meatballs in your hands. Heat olive or other oil in a frying pan on medium high heat for a coupla minutes, roll meatballs on the frying pan to burn the outsides of the meatballs to make them more firm. Then add the meatballs to a sauce pan half or so full of pasta sauce (no high fructose corn syrup) so that it covers all the meatballs, cook on medium for five minutes so the sauce bubbles a little but doesn't overflow, then lower heat to low and cook in the sauce for 25-30 minutes more. Add un-eaten meatballs a tupperware container in the fridge and re-heat as many as you want in the microwave as needed. Don't dump the pasta sauce because you need that now to add to the spaghetti squash (or regular or better yet whole wheat pasta if you wish instead) Spaghetti Squash It's a yellow vegetable that look like a small pumpkin, also called squash calabeza. Cut it in half lengthwise with a sharp knife, (careful) and scoop out the seeds and thick strands around the seeds. Put the two halves face-down in a 1/8th inch of water in a foil lined baking tray. Cook 45 approx. minutes so the outer shell is kinda soft to the touch of a fork. Take out with oven mitts and scrape out the strands of the squash which will look like strands of spaghetti in texture and color Then add most of the pasta sauce that you just cooked the meatballs in and then eat a little low-fat parmegan cheese on top and eat it with the home made meatballs, as if it was spaghetti and meatballs. Very low in cals and carbs and very yummy. Makes enough for several meals. Stir Fry- Beef & broccoli & mini-peppers Buy a deep metal wok, with or without a lid (no power needed, just a plain piece of metal) Spray wok with a little olive or canola oil, heat on medium. Brown chopped up top round beef strips (usually 3/4 to 1 lb. worth) for a few minutes, drain fat. Add chopped up broccoli florets and chopped up mini sweet peppers Cook for a few minutes strring often and then add back meat. Now add two tablespoons of stir fry sauce for flavor, lower heat slightly to just under medium and keep cooking and stirring with a wooden spoon for five or six minutes. Makes enough for several meals. Stir Fry- Chicken with snow peas, baby carrots and baby sweet corn. Spray wok with a little olive or canola oil, heat on medium. Brown medium sized chunks that you chopped up from a package of three boneless chicken breasts and then drain fat. Add small package of chopped up snow peas and small package of chopped up baby carrots and small package of can of sweet oriental style baby corn. Cook for a few minutes strring often and then add back meat. Now add two tablespoons of stir fry sauce for flavor, lower heat slightly to just under medium and keep cooking and stirring with a wooden spoon for five or six minutes. Smoothies (great drink on a hot day) Banana Blueberry Smoothie- Blend one scoop of vanilla whey protein powder in 1 1/4 cup of fat free milk and add 1/2 of a cut up frozen banana and a half a handfull of frozen blueberries with a 1/4 cup of crushed ice. Blend 15- 20 seconds Yummy! Banana Strawberry Smoothie- Blend one scoop of vanilla whey protein in 1 1/4 cup of fat free milk and add 1/2 of a cut up frozen banana and two medium frozen strwberries with a 1/4 cup of crushed ice. Blend 15- 20 seconds Yummy! Note- Any of the items above that you cannot find at your grocery store, like the Ezekiel tortillas, or packages of baby corn and baby carrots try Whole Foods if they have one there. |

If you like steak try this marinade:
1/4 cup of olive oil 1/4 cup soy sauce tbps of lemon pepper tbps of garlic salt double if your going to do two steaks, let them sit in a bag with it for like 30min- 1hr shits really good |

I created this dish about 15 or more years ago. Detailed instructions, no pics though, you'll have to use the old imagination.
CD's Volcanic Meatloaf: "Volcanic???" . . . Sounds Dangerous. Well, it isn't, trust me. If you love meatloaf, you are gonna love this recipe. Take a big pot or large bowl, and throw in 1-5 lbs of lean ground beef. Crack 1-3 large eggs, and pour em in with the meat. Add in bread crumbs, or take 5-10 slices of bread (hopefully whole wheat) and crumble them up, add them in. I like to add some chunky hot salsa, finely chopped onion and red pepper, and some garlic. Mix this all up with a big wooden or metal spoon, Or if you have one, use the old food processor. I get a sore wrist mixing this. Now, once this is all mixed up, what I do is I scoop out this mixture with my hands and pack it into a giant meatball, a sort of a football shape. I roll it and knead it for a few minutes, making my wrists more sore of course, then put it in the big oven roaster. Then, I push down into the top of it with my fingers, and hollow it out a little, creating a deep pocket in the meatloaf. Here it comes. . . I select a different type of cheese each time, I'll leave it up to you to pick the one you like best. I have used Gouda, cheddar, extra old cheddar, monterey jack, etc. I cut a long, skinny piece about 4 or 5 inches long, and about 2 inches by 2 inches thick (depending on the size of your loaf, heh heh) and I insert the chunk of cheese into the meatloaf. Cover it up. . . I mean, push the meat loaf together again, over the cheese. Make sure that the cheese is deep down, and that it is sealed in there good. Add just enough water to the roaster to cover the bottom, and bake in a pre-heated oven at 350 deg. for about an hour or so. When the smell is such that you just can't stand it, you'll know that it's done. I can't describe this. . . maybe other cooks know what I mean. I just know when something is done cooking by the smell of it. . . It just "smells done". When you serve this loaf, you will find that while baking, the cheese has bubbled it's way to the top of the meatloaf, and forced it's way through the opening you made. It has run all down the sides of the meatloaf, and baked on there, creating a "volcano effect". It's good...Go nuts.

I love cooking with Spaghetti Squash soo tasty compared to pasta you should definitely try the recipe Jim posted. And if you want something lighter then just brown some onions, green peppers in olive oil throw the spaghetti squash in too to heat all up, then throw some diced tomatoes and parmesan cheese on top to serve.
I love to cook and if I had known this thread was going to be here I would have photographed everything I made yesterday for my dad's birthday. If you like eggplant this is an awesome recipe. Once you make it once you will start to screw around with the measure, I like to add more garlic and more wine ![]() The Internet is an awesome place for endless recipes! I also make this moroccan chicken if you are into bbq it is fantastic. A lil' bit of a spice to it, I like to serve it with some garlic sause or tzatzki. Basically you just need throw the following things into a non metallic dish stir them all together and add your chicken to marinade for as long as possible. Ingredients: 3 tbsp olive oil, 4 tbsp lemon juice, 2 tbsp chopped fresh parsley, 2 tbsp chopped fresh cilantro, 1 garlic clove, finely chopped, 1tsp ground coriander, 1/2 tsp ground cumin, 1 tsp sweet paprika, pinch of chili powder (to taste). Serves 4. Okay and finally I will offer up my chicken divan recipe, but I could babble on about recipes all day so hit me up if you need more ![]() Ingredients:

Emeril Live usually has easy to prepare dishes and aren't "way out" recipies that most folk wouldn't eat except for a special occasion.

If you are really lazy subscribe for free to the kraft magazine. (as in kraft foods). Now sure it is very biased towards their products but the recipes are good and you can use substitutes instead of their lousy bottled dressing and stuff.

try this:
"curry chicken on coconut" a friend of mine who is a chef suggested me to do it and it's really good.. you basically prepare some chicken (cut into small pieces, then put a little milk and curry so they become all yellow). while chicken is cooking, you put a thin layer of coconut on the dishes and then you put the chicken on.. you'll see that it's a great combo. or well you could go for some gnocchi..but this is a good one, more particular... or you could for example take 2 different varieties of rice, the black one and the basmati one, first you cook the black one that takes longer for boiling and then you take the basmati... and you can serve them again with the chicken or some other kind of meat. hit me on icq if you want some more tips, i love cookin'! ;-) gab |
