Congrats on making the switch, i did it myself last month

Here is some stuff I have that i find pretty useful

Adium - icq/msn program
Openoffice - microsoft office basically
Entourage - for e-mail/tasks/calendars
Air Video Server - lets you stream any format movie on your mac to your iphone to watch
Vuze - for torrents/p2p
VLC - for avi movies
Filezilla - for uploading/downloading stuff to servers

If you're a coder, check out Coda from http://www.panic.com

I've been using that for all of my coding for quite a while. It's great but there are comparable Windows alternatives.

openoffice.org for word documents and such is free and great.

"transit" has been the best ftp that someone has shown me.

"chicken of the vnc" is solid.

"Onyx" is a great free program to clean up your hard drive and errors. titanium.free.fr/pgs2/english/download.html

iSerial .. and this is some of the things recommended to me when i first got mine:


My thoughts:

Programs:
Skype
Adium (DO NOT INSTALL GROWL)
iMail (or thuderbird)
Firefox (Safari Sucks)
BBedit (good text editor)
CuteFTP (if you are used to ws_ftp_le)
VM Ware - (for windows virtual machine)
XBMC - (media center)
Office for Mac


Make sure you configure:
spaces (actually assign applications to them)
secondary click (right click)
password protect on return from screen saver
hot corners (good if you have kids or a maid..)
use "real" f keys (so f5 is actually refresh. ect... in settings)
nufile (google it)
filevault (in security settings (encryption))

airport extreme is worth getting (much better than linksys shit)

LOLz stay out of Mac threads "fanboy" (sorry I had too). I don't creep into "My PC keeps fucking crashing" threads. I was a beta tester for Windows 7 and it had a ton of security holes, be prepared for a new wave of spyware. I was a PC user for 6 years until I became a cameraman and video editor full time. There's nothing like not having to worry about viruses, spyware, malware, etc. when it comes to losing critical data like video files.

Dude...I am on a Macbook right now. I'm hardly a fanboy. Ignoring the fact that something may be superior to Mac makes you the fanboy. Everyone was a beta tester for Windows 7. It was an open beta. I did it too.

I have 2 monitors on a PC and an iMac on my desk. I haven't had a virus on my PCs in years. I've never had a major data loss either. The one time I lost some data was because of a Seagate drive going tits up. It wasn't a Windows issue. You know you still need to do backups on a Mac, right?
