my smaller wordpress ones do but the larger ones take 15-30 min

Probably a little late now (and not a fault of yours), but wordpress did finally manage to integrate the multisite features into the main install package. You could combine all blogs on a given server and cut down on update times (not just WP but plugins as well). It'd probably be a huge pain in the ass to implement at this point, but surely I think it would be worth it in the end.

Integrated wpmu is pretty cool tho, not that I've used it.

Right, but surely there's more than one blog on a single server :P
The ones that reside on the same server can be tied into the same install.. Wouldn't help for multiple servers, but would definitely help for multiple blogs on the same server.

If your WP upgrades take a long time, you might also consider setting up SVN for upgrading. Ask your hosts!

There's plugins for automatic upgrades

edit: or put the ftp info into each so upgrades are a single click in each admin area

Unfortunately, that's how things gets broken. I'd never rely on automatic upgrading.
