Apple in my opinion used to be good, but since they've been making so much money with iPad, iPhone, and iTunes, they have really been letting multimedia professionals down with the lack of technology upgrades to their software such as Final Cut "Pro".
I think as of right now, I'd build a good i7 with 8-12 GB of RAM and use Adobe CS5 [Premiere, Photoshop, and After Effects] with a nVidia GTX 470 graphics card.
The reason is while Adobe has been perfecting and upgrading Adobe Premiere CS5, Apple is still lacking behind primarily in GPU acceleration and Multi-threaded processor rendering.
With all that being said, they have not updated the 30" Cinema either, specifically with LED technology which is the IMO superior display technology of today.
Right now, If I was setting up an amateur or pro studio with in-house video editing, I would built it out on Windows 7 PC systems, Gigabit LAN, and Premiere CS5. It would be cheaper and you would be ahead of the curve.
