Making the switch from Medium Salsa to Hot

May i suggest Herdez Salsa as well? http://www.herdeztraditions.com/ it is about the best Salsa you can get at the regular grocery stores. |

I would say dont get too crazy, go simple but good. Probably some fresh white fish (halibut or alike) and king prawn would do. Dice it, with some onions, garlic, cilantro and either habanero or a less spicy pepper, let it all marinating in lime/lemon juice for 8 to 16 hours (so the seafood cooks in the acidity of the lime) and serve it with some chips. It should please the wife and it certainly is a tasty treat :) |

Herdez is actually pretty good, I buy it.
This summer I grew Ghost Chili's in my garden and had no idea what to do with them. My neighbor a few houses down is from Mexico so I brought a bag of them over and said "Here ya go" 3 days later I saw him in my backyard watering my plants and picking more. He was in love with them. He brought me a bunch of Salsa that his wife made with them. While I can say it was pretty fucking hot, I could handle it. It was the next day I was in agony. |
I almost always go with fresh salsa versus bottled
I make equal amounts of mild/medium and hot/extra hot For some dishes, they don't need all the extra heat...but for those that do, I like to break out my fresh red pepper/habenero salsa with a little bit of honey for some sweet to go with the ass burning heat... |
Nothing beats homegrown habeneros, my friend grows them and we like to dip them in homemade bleu cheese dressing....so good!

You can make a very simple salsa at home with somewhat fresher ingredients...
Buy: Hunts petite diced tomatoes in the large (medium) can. Ortega diced jalapenos. Use half and then add to taste and temp. Green Onions (you want the white portion diced small). Cilantro (diced) Avocado (cubed) Limes (squeeze two into the salsa) Or switch things up in hotter times with a cooler salsa... Same tomatoes as above 1 mango sliced and diced 1 can of corn 1/2 cucumber chopped and seeded A few jalapenos diced Small pour of olive oil Cilantro chopped lime juice and pepper to taste |
