Bison on the Menu: Is This OK?
I recently got a newsletter from my "local" grocer chain advertising "Bison on the Menu".
Now, though I'm not the sort to gripe about eating horse meat or anything like that because they're pretty (even dog meat), I wonder about eating Bison... They're closer to cow than horses are, granted, but aren't they endangered? And yeah of course these are cultivated, is this the way the big noble beasts are going to survive, if we grow them to eat them? The online pamphlet doesn't say if they're American Buffalo or Plains or the Euro-kind, but I still wonder if it's a decent/kind/ethical/whatever way to go... But still, you know, Buffalo Chili just sounds so good lol.... :D |
I have Bison burger once a week. Grass fed, hormone and steroid free. It's also very lean. Tastes like a perfect hamburger should. Use it for tacos, chile, spaghetti ..... $8 a pound but worth it.

I been eating bison beef for years. It's very lean and tastes the same as cow meat.

Cows and Chickens would be long extinct if we didn't eat them, so save the Bison and have a burger.

Yep I've been eating bison for a few years now - burgers are great and lean.

It's ok to have I think without any moral problems at this point. I just recently saw some show on PBS where more land had been set aside for the wild herds.
One rancher was also talking about how much better the meat was since it was naturally grass fed with no chemicals or hormones. Hard to argue with that. |
You gotta try the Bison prime rib, it's a great cut of meat, so lean and tender.

i did a population model on bison back in undergrad, which i believe was then taken and expanded on by someone else and used as their own..lol
To be fair the model was actually on a bacteria called Brucelosis abortis, something like that anyway, it causes spontaneous abortions in cattle, and humans. So some cattle ranchers wanted to kill all the bison, as they carry it. So we were trying to model the spread of the disease. anyway, bison tastes good |
I've also heard that bison is quite tasty although I've never tried it.
I did have caribou steak while in northern Norway many years ago. It was delicious. |
Bison can be sustainability raised and ethically harvested and yes - it does taste great.
Any "factory farm" raised or corn feed meat is crappy for the environment, the animal and your health. Long term goal is to raise them and elk on property I am going to purchase. |
I've recently switched to bison and it is much leaner.
I read on the package it's illegal to give bison any hormones .... so there's a bonus. |

All the comments above are true.
It tastes like a perfect hamburger when it's cooked right. It's lean and healthy. Nothing gamy at all in the taste. There are over 20,000 -30,000 wild bison ranging in protected areas. There are an estimated 500,000 on commercial ranches. The commercial bison comes from ranchers who raise it for market, starting from from Indiana and Wisconsin in the Midwest to all points west. Anyone in the Chicago-Milwaukee corridor who's interested should stop at the Woodman supermarkets that carry a comprehensive selection of unusual and game meets, always with a big selection of bison steaks and ground meat. |

I fucking love bison....sort of a peppery flavored beef as the others in this thread have mentioned.
When I grew up in Wyoming as a kid, there was a guy who raised beefalo, a cow-buffalo hybrid and the meat was one of the best things I've ever eaten in my life. It's not cheap, but because it's lean and not full of hormones, it goes further in a meal. I sometimes will substitute bison hamburger into a meatloaf and my family raves about it. |

ture story... The US was going to be a BISON country instead of a BEEF country, but, cattle were more docile than buffalo and easier to raise/ranch.
Bison kept busting through the fences. Even our forefathers knew buffalo was better than beef. |
