Yeah, smells great. Most truffle oil is fake though. The cheaper ones for sure. It's gas you're smelling :(

Evil Chris 01-30-2013 10:11 AM

The Truffled mac & cheese at Smith & Wollensky is awesome too.

Frank... what are you using truffle with? Faves?

Dirty F 01-30-2013 10:27 AM

I actually like to buy truffle cream made from white truffle. I use it in sauces. Also black truffle on top of coquilles together with some parmezan mousse is awesome!

Kasumi 01-30-2013 10:37 AM

I like truffles with Iranian black caviar for breakfasts.

tried black truffles a few times when i was in europe, tasted like very good, expensive dirt...they had a guy that came out with a little glass case and measurement device, used a special razor to slice pieces off...

that place was damn impressive, i'd definitely go back.

I haven't tried cooking with them yet. I need to train the dog to sniff those out, so expensive. hehe

Markul 01-30-2013 01:18 PM

Never tried it... sounds like I'm missing out.

Here's the recipe, but just reading it over I'm not sure I'd have success with it.
http://smithandwollensky.com/recipes...caroni-cheese/

it's not easily put together.

it's easier than you think. We make Mac and Cheese this way (without the truffle oil) all the time. Goes together in about 20 mins.. and then its into the oven. Mildly more tedious than making Kraft Dinner, and the results are far better.

I put some truffle oil in a little olive oil spritzer that I had and I spritz fresh garlic bread with it during the last minute of baking and it is divine! A delish treat! Also, a little truffle oil in store-bought Alfredo sauce and people will think you made the entire thing on your own! Anything cheesey + truffle oil = heaven! And truffle oil is the secret to my vodka sauce :)

I must have some defective area in my nose and taste buds - To me it smells/tastes just like gasoline.

Sarah_Jayne 01-30-2013 07:23 PM

If you go on Chopped, never reach for the truffle oil.

You probably tried cheap truffle oil which really is gasoline.
Also there are a lot of different truffles. From extremely cheap Chinese ones to extremely expensive Italian ones.
If you don't want to spend tons and still want a nice truffle then try to find black winter truffle. 50 dollars should be enough to put it in a dinner for four.

What's wrong with red onions?

I personally love red onions (have you ever had them grilled? delish!) but Scott Conant thinks they are wretched and foul, no matter how they are prepared. But some idiots, even knowing this, put them in their dishes and say "yeah, we know you aren't a fan of red onions, but..." and typically, their dumbasses get chopped!

Baddog introduced me to that a few years ago :)

Supz 01-30-2013 09:28 PM

A lot of Italian places just slice is thinly over pasta with a mandolin. More so often with white sauce then red...

mariahxxx 02-01-2013 08:52 AM

I use truffles in all kinds of stuff...you can buy truffle oil at most decent supermarkets now, but it isn't that great. you need to go to a specialty grocery to get decent quality truffle oil.

I make a bomb ass truffle mac n cheese

here's a video of me proving it :)

When I was in Italy the last time I went to a truffle broker...it was amazing! here's a plate of pasta with black truffle shavings I had in Verona, Italy

I often wonder if any of the chefs on the show have ever actually seen the show.

One of my favorite British chefs is on the Champions version at the moment. I am hoping he got the no truffle oil memo.

loreen 02-01-2013 09:16 AM

I like truffles risotto. When I first tried it the aroma was a bit too strong, but once you get used to the taste it gets better :)

I wonder the same thing! But some of them flat out tell Conant, before he takes a bite, that they know he is going to rip them apart for it, but they're out to prove him wrong. Two of my friends have competed on the show now... and they watched episode after episode preparing for it!

Have you tried it at Hot's Kitchen? or at Hudson House? Both are great! (I've had it at the S&W in Miami, I agree it's good.)

My body rejects cilantro.
Seriously. It makes me sick.

I'm the exact same way. I've read in blogs where people have re-trained their tastebuds to accept cilantro but I don't think I can stand the sick feeling long enough to keep doing that to myself until I can learn to tolerate it. Just not worth it.

pornmasta 02-02-2013 10:13 PM

it's funny for me the taste is delicate and subtle
