tri tip>
took a tri tip, sliced the darn thing down the middle, laid it open and rubbed the inside with spices, then slather with cherry jam... stitched the tip back together with wooden stakes and rubbed the outside with spice... into the fridge..
this morn I pulled the tip out, injected it with cherry juice mixed with balsamic vinegar, and a touch of honey... dusted with a touch of habanero powder, some black peeper... then drizzled with honey... went in to the smoker 3 hours open, 2 hours wrapped and now in for the last hour unwrapped... I'll shoot a couple solo vids then we'll have some lunch... for BBQ sauce I took a bottle of 'store' sauce made with brown sugar... (no corn syrup for me) dumped the sauce in a small pan, threw in a handful of dried cherries, set the stove to low/warm and let the stuff percolate of about 20 min... really good, great flavor... |
