I should know this - DNS Question
 

If I have enabled wildcard as a CNAME record eg - *.domain.tld - For use with WPMu can I still use another subdomain eg - stats.domain.tld?....

Will stats.domain.tld look for a blog or work in the same way as if the wildcard was not there?..

Yes, I think the original reason for sub-domains was to be able to point them to different servers, so it should work fine - even if the domain without a subdomain goes somewhere else.

Yes you can if you want use stats.yourdomain.com just create the record and thats all.

Yes, you can do that. The specific configuration of a third level domain takes precedence over the wildcard. The wild card is a last resort catch-all.
