Word Press single vs MultiSite Pros-Cons
 
What's the best route to bulid multiples?
Can you have muliple sites under one WP instalation or can you only do it with multi-site.
Is multi-site better. Is it secure?

I d rather go for multiple sites than on wp, though harder to manage but more secure, also based on what your are looking for, for about 10/15 blogs, i would use 2/3 hosting companies just to make sure some of your sites are still onlie if one host is havig downtime, that's just my opinion and surely some people won't agree

well using mulitsite is just easy and a smart way of building up a blog network.

as for the hosting i would just keep at one host and make sure it is a stable host. Having your own root access helps, being able to do your own reboots etc is also key. You will notice that you will not experience much or any down time. Often down time is caused by resource issues or script failures caused by mysql. A reboot helps in the short period after which you can have an agent look at tweaking your setting for example.

Multisite is the way to go. Makes updates much more convenient. I have been using it for quit a while now and would not want to have to go back to updating sites individually. Not going to have anymore security issues than you would with any other wp installation that I can see. You do have to make sure that your server setup is compatible though.
