Not sure I like the idea of cooking in water, since most of your flavour for meat and such comes from the caramelization. I also don't like cooking anything in plastic either.

The meat is inside a vacuum seal bag and that is inside the warm water. But you're right, there is no browning for extra flavor. It's supposed to keep the meat moist and tender but not everyone likes it.

I would try to find a friend that has one to borrow before I bought my own.

The only nice thing about cooking in water is you can then change the over all flavor and also use the water as a soup or stock for gravy etc.
