We have some people at YNOT Mail who use split testing when sending out emails. It's kind of neat really - you can tell not only which emails get opened more, but also which one results in clicks.

It's only gambling if you don't have the traffic to get within a margin of certainty. If you do have the traffic you are leaving money on the table.

It depends on the person's ability to pick the right product and message for both A and B.
