In America we use the term to "Polack" to define a particular kind of stupid racist Polish person, not a normal person, like foreigners use the term "Trump supporter" to define a particular type of stupid racist American person.

From a verbal standpoint, there's alot of tongue rolling and hard sounds happening in Polish that english-speakers have alot of problems with it. As for Polack, as klinton said it's really just means "Polish person" in Polish so while it might be meant as derogatory - it just means that to us really.
