Healthy CHICKEN SKIN is the latest product that people are going nuts over. Flavored or plain, they do mail order or visit their store. Four grams of saturated fat per serving. I used to take a sharp knife and cut out the fatty pieces and use the skin as a protector for the chicken. I’d toss it out or give it to my dog occasionally. I can’t believe people would pay money for chicken skin. I doubt it will catch on or last. |

Even when I'm dieting, you will never see me throw away a nice piece of chicken skin. For one thing, animal fat is good for you in a moderate amount -- and the other thing is the skin is where the magic is.
I remember when my mom made fried chicken. She's from coal country West Virginia. She fried up drumsticks and thighs in a half inch of vegetable oil. No one used no fucking light coating of olive oil back then. There was some level of caution required to walk past the stove. After I got hit in the cheek with a grease meteor one time, I shielded myself in the future. I'd use a magazine or whatever I could grab because my head was level with the frying pan at that time of my life. I'm not getting hit in the eye by boiling grease. Mom would scrape up all that crispy chicken skin gravel and mix it with my mashed potatoes. Grease and all. Then I'd take a quarter stick of butter and shove it right in there. It's tough waiting for the butter to melt. A lost that fight several times. It's heaven in your mouth and hell in your arteries. |
