When in Louisiana
I have seen the signs so I stopped and gave Cracklins and Boudins a try. It seems to be a staple thru here.
Cracklins are pork meat fried in chunks, the Boudin is as I had it in a big ball, filled with cheese and rice and alligator meat and jalapeno deep fried. I didn't care for the Cracklins but the Boudins were awesome! |
