Hi: I would like to hear other people's opinions on next:

If a site is ranking for various keywords that were never targeted with SEO pages on the site, how to proceed?

Shall I create completely new pages targeting those keywords? or just leave it like that. Some of the keywords are in top results but the majority are ranking much lower.

Thanks for the detailed answer but I was looking for an opinion regarding keywords I am getting traffic already without optimizing pages. It would be hard to optimize existing pages for additional keywords without putting in jeopardy SEO for targeted keywords.

Maybe a better question would be, will I confuse SE if I create new pages for keywords already getting clicks without dedicated pages?

Although the current situation is insane, huger drops in traffic just like other people are reporting, without any visible reason

It all depends on lots of things, like what KW did they find your site with, is it a specific porn search or something like "Chipotle delivery" and yours came up for some reason, did that search turn into a sale, is the search from a real surfer or a bot, is the KW something that would benefit your site as a whole or no, etc.
You know, does it make sense to you to add it? I don't know because I don't know the KW or the page that it lead to.

Also, if that KW isn't scalable, then don't worry about it.
