How much would each of these be worth?
No traffic or let's say their on the 10th page in google but their pr4 and they get 100 hit's a day for keyword porn, sex, free porn or whatever?

How do these deals go? Who starts first, the buyer sends the money, risking to be scammed (and not given the domains), or the domains are transferred first, risking to be scammed (and not receive the money)?
How can you know the seller won't pull down the backlinks to it, making it drop to lower PRs with the next update?

Not much at all.. It doesn't take long to make a link PR4... So finding a link that has less characters in it would be worth more than buying your longer link.
