GFY Chefs! I want to know how you make a burger!
I had a thread on this about a year ago and couldn't find it so...
I've tried a few different recepies posted for burgers and they came out great... There's obviously some new people here now and I think it's about time to get some other input on how to make a delicious burger. I'm grilling this in the backyard. Meat is downstairs getting to room temp. Probably start cooking in about an hour or so (I'm a night owl). How would you make it? |
make the meat patty, sprinkle on some kosher salt, and grill.
Oh, put a pan with water on one end of the grill. the steam helps keep everything nice and moist. Thank me later. |
i make the patty, slap it on the foreman grill...when it's done i slap it in between the buns with some ketchup and mustard. good thing i'ma rocket scientist...

It's really important to NOT use lean beef. The more fat the better.

Here's my bubba burgers !
1 1/2 pounds ground beef 1 cup ritz cracker crumbs 1 egg, beaten 1/2 cup each of chopped green peppers and onions 1-2 shots of liquid hickory smoke 1-2 shots of Italian salad dressing 1 splash of steak sauce you like - A1, worchester etc.. Add garlic, salt and pepper to taste 1 cup of bacon chopped up and cooked 2 cups of cheeze chopped up (I like Velveeta cheese) Mix well. Shape into 4-6 patties and cook. NOTE: Sometimes I mix in some BBQ Sauce and a a few drops of hot sauce if they're just for adults! |

It only takes 5 minutes because I don't measure anything I just grab it and
dump it in. I just microwave the bacon on a paper towel (cut up) and by the time the bacon is ready the rest is already mixed up. If I don't have any ingreadient it just doesn't go in or I'll grab something else like bread crumbs if I don't have the crackers or just use onions if I don't have the green peppers. |
Make sure to soak the meat with a good mouth wash. I use Listerine.

Form into 8 1/4-inch-thick patties. Place pickles and cheese on four patties. Top with remaining four patties and seal the edges. Broil or grill until done to your liking. |
chopped onions, egg, crakers, salt, pepper, add to ground beef and mix well.
grill like you like it. Taste great! |
lean ground beef
lots of fresh ground pepper--BAMM BAMM some salt some paprika add chopped onions & chopped green peppers & chopped mushrooms make into patties, now slice patty so that the one patty becomes 2 patties & put cheddar cheese on one of them then put the other half back on it to make it into one patty again. take quart of jack daniels, pour into bowl, put patties in it & let soak for a while now pan fry them in the jack top with swiss cheese & bacon, lettuce, tomato, ketchup & mayo, served on a nice bun :) |
There's 1,000 and 1 recipes so I won't even bother with that, but I will offer up one solid piece of advice. Do NOT press the burger with the spatula. So many people do this, they flip it, and then smush it a bit. All that accomplishes is squeezing out the precious juices that keep the burger moist and tasty.

start with your ground beed. i usually use 85/15. good balance of fat and lean meat.
season it with some salt, black pepper, finely diced onions, garlic, and a little worechestershire sauce. make your patties by taking out lumps of meat about 5 ounces or so, rolling them into a ball, and then flattening them against the table to get all the air out and to make flat and burger shaped. while cooking, put some wortechestershire sauce on from time to time. enjoy. :pimp |
