I would also be interested to know what programs are good with Spanish traffic, Spanish sign-up pages etc, processors that are friendly towards Electron and Maestro cards is also a huge plus.

Spanish traffic doesn't necessarily mean Latin niche sites, it just means the sponsor has to be able to facilitate entry and navigation for the not-speak-a too good-a English crowd.
