Ever do sweet potato fries?
Sweet potatoes are apparently one of the most nutritious things you can ingest. They're a great carb & calorie packed. Recently I've gotten into baking them as fries. I cover them in EVOO, bake them at 350 for 30 minutes... and it's near perfection.

I have a fryer here in one of the kitchens. We love to make fried sweet potatoes.
Yams (the orange ones) are what we use. They're sweeter and tastier than the more yellower Sweet Potato. |

Love em. One of my favorites. My daddy used to make these for me all the time.
I cook them basically the same way, but if you're in a hurry, you can also spray them with Pam cooking spray (I use the butter flavor) and bake them. |

Sweet potatoes fried are great. I always fry some when I fry the regular ones. It's cool to have a mix set of sweet and regular potatoes fried in the same plate. lol ;)

I have had them as baked fries, fried clean, and tempura style... all were amazing and I order them on any menu I see them on

I have some sweet potato casserole in the fridge right now. Prior to that I had some home made baked sweet potato chips. :)

oh yeah...when i do a turkey deep fry..i always cut up some sweet potatoes and regular potatoes....deep fried fries are the best

I use yams and do them baked with a little olive oil, black pepper and fresh grated parm cheese...

I have never tried them deep fried but It happens I slice them up and grill them with salt, black pepper and garlic/sweet chili marinade.

regarding extra virgin olive oil, i never ever cook with it. it ruins the oils flavor and is a waste of money. i spend good money on extra virgin olive oil and it is used only as a finishing oil, salad dressing, or other cold applications where you want its intense flavor.
when it comes to cooking and olive oil we just use straight olive oil, no extra virgin. it is about half the cost and has the same health benefits as extra virgin and since cooking kills the oils flavor it tastes the same. though we fry our stuff in peanut oil and use a lot of avacado oil. oh i almost forgot. i love sweet potato fries. we make a mixed batch of fries on burger night. it contains russet potato, sweet potato or yams, carrot, and my absolute favorite parsnips. parsnips seriously rock and are super good for you. very high in vitamins and they turn very sweet. really think it is one of the most underrated vegetables that once was popular and got lost in the past somehow. |

I know a guy from Chicago who works the Midwest County and State Fairs. He does deep fried spiral cut whole sweet potatoes and they are a fantastic hit everywhere he goes. He has several condiments at his stand. Salt, various peppers, garlic, powdered sugar, cinnamon etc, etc.
He also does deep fried spiral cut whole Russets and Vidalias. One potato totally buries a 10" paper plate, at least 8" high. People line up to get them. That's all he sells, there's only 3 items on the menu :upsidedow |
