Rotisserie chicken recipes...? (pics)
I was given a George Foreman rotisserie grill by my neighbor -- and tried it out at the weekend. I seared the skin with boiling water, then basted it is salted butter, black pepper, and Cajun spices. It turned out amazing!!!

What I would do is soak that muthafucka in a salty/spicy solution overnight and then roast it.

If you have a kosher butcher, get the chicken from there, otherwise, soaking it in a brine/garlic mix for a day or two then season it with spices mixed in olive oil that you brush on before popping it in.

Very simple no recipe recipe.
Dry off the bird. In a bowl mix up about a cup of greek yogurt or mayo. Grate in the zest of 1 lemon or two limes. Add in the juice of the 1 lemon or two limes. Add in about a teaspoon or pepper and salt. Toss in 3 tablespoons fresh or 1 tablespoon dried oregano. Salt and pepper inside of bird. Tuck the wings, cut slits into the ass end of the bird so you can tuck in the legs to secure them from flopping - or just tie them off with string. Then cover the whole bird with the mixture. Rub it on evenly. do make sure the bird is dry first or it more of it will fall off. Drip tray a must. Coat evenly and cook as normal. Only way to make better is to brine the bird first. Or as an extra secret cut some slits in the breast, thighs, and legs. To create more surface for the mixture. However if you do that you may as well double it up and spread some under the skin too. |

I ended up giving mine away because cleaning it out got to be such a chore and the grocery store has them fresh for the same price as a whole raw chicken. They make a mean fucking roast. |
It is hard to pass up the store rotisserie chickens. They are like 4.99 to 5.99 here and often have either coupons for sides at the deli or buy 1 get 1 free days.
Only issue is they come in limited flavors, but fuck if you need cooked chicken meat and do not want to waste an hour or so cooking time. It is a no brainer. The stuff is great for ripping into enchiladas, taco's, etc. We always do the buy 1 get 1 free deal any time we see it because it is that good. Even if we did not plan on eating chicken that night. We will just put aside and shred it. |
Publix has the best rotisserie chicken ever, aint even worth the effort of doing it at home anymore
