either gonna be a mass of dope chili if i host, or a massive bottle of bourbon if i head to my boss' house. gonna be a game-time decision.

I'm going to get food snobby here, but being a Texan, velveeta and rotel is not queso, its cheese dip. I enjoy it and make it from time to time except I add in some cooked Jimmy Deans spicy breakfast sausage, just crumble it up into the cheese before you serve.

But for real chile-con-queso -

1/2 cups canned chopped green chiles or fresh chiles, peeled and finely diced
1/2 cup diced fresh tomato
1/2 cup diced onion
1/2 cup diced celery
2 teaspoons Tex-Mex Spice (3 tbsp cumin, 2 tbsp garlic 2 tbsp salt, 1 tbsp black pepper)
1 cup chicken broth
1 pound American cheese or more if needed, cubed

In a saucepan, combine chiles, tomato, onion, celery, Tex-Mex spice and chicken broth. Bring to a light simmer; gently cook for about 5 minutes. Reduce heat; add cheese. Simmer until cheese melts. (If mixture is too thick, add water; if it's too thin, add more cheese.) Remove from heat.

Yes its more work but trust me its worth it

I am with you though. Trust me I prefer to go the high end way. But its been tradition with my friends and I to make the ghetto ass white trash version. I even had the former head chef of Windows Of The World eating it like mad years ago. I have to make it vegetarian friendly this year so omitting the pork. But your recipe is awesome. I will try it one day.

Boiler Maker chili and some soy sauce and ginger chicken wings. Always works well.

I'm having a lot of food. Everything from Ribs to Brats To hot wings. The signature dish that is always most popular at the game each year is the cream cheese and shrimp dip.

Get a couple of cubes of cream cheese, throw it it in the mixer with some cocktail sauce and blend it on low until it is soft and easy to scoop. Then add in some garlic salt and a a little old bay or other seafood seasoning salt. scoop the mixture into a dish and cover it with cocktail shrimp and diced green onions. It rocks!

I am excited for someone else to worry about that this year.

Homemade chile, Shrimp (prawns) into boiling water, chunk of Blue Cheese (cause wm's love blue cheese) Maytag is the best if ya can afford $15/LB :) some celery sticks, gourmet quality, chocolate chunk cookies, (many groc stores make some good ones now made with palm oil)
Lots of Coronas or Pauli Girls and/or Pina's for her.
(there are better (like Grolsch or Pillsner Urquell from Czech) but Pauli is the best premium imported beer for the money around here)

(Drink nothing but orange juice 1st half of next day to thin the Blue Cheese from your veins. :)

Tip for your next conquest: Get some of that Cream de Coconut in the groc store (white gooey stuff, little brown can 2 inches diam by 6 inches tall) and some pineapple juice. Keep with white Bicardi rum.

Add the 3 ingredients with some ice in a blender. You can't really fuck it up. She will be impressed and so will you. :thumbsup

12 oz PJ
1/4 cup cdc
2-3 shots booze
8 cubes

Throw a cherry on top and you WILL get laid! :) LOL

Serves 2

LOL Good humor. Actually I must confess the chile was pre made :) (taking out of freezer now) and how much work is opening a bag of shrimp, a big chunk of BC and a carton of quality cookies. No work here. :thumbsup

After reading that other thread I should invite Dyna Mo too b4 the cookies :thumbsup

Delivered for Dominos during 6 super bowls. Good tip day.

Also heard Kirby Puckett hit the homer in the 1991 World series in game 6 to take it to game 7 from outside in the yards of houses after just delivering a pie to a college area. What a roar I heard for blocks around. Was great.

Thousand pizza stories. Don't get me started. :)

Colt Burger with a side of Manning Fries  <---my game face

Pizza, wings and dip here!

Vjo 02-05-2010 09:20 PM

Actually a big deluxe (thin crust) well done Pizza would be my choice but the other guy from Texas with the great cheese dip recipe got me in the mood for chile.

And to the guy in Panama or Puerto Rico was it, who couldn't get a well done pizza, my Dominos would burn your pizza no prob. :)

Genuine Texas style fajitas made in Texas?

Dayyyyamm I love mexican (or Texas Fajitas) the most. But you will not be a thin man. Mex is so easy to overeat. Why is that.

Anyone hungry? I'm on a diet here for pete's sake. Pass those ginger wings :)
