Anyone got a good trout recipe?
I've cut my carbs, no breads or sweets or fast food for 3 weeks now. I got some fresh trout from a buddy and I can bread it, sure, but looking for something better than just frying it, any ideas?

Put in tinfoil with olive oil, lemon juice, fresh parsley and cook til done. :)

Is it already filleted?
If not, filet it, keep the bones in for now spread it out on a cutting board or baking sheet. Spread butter or your favorite butter substitute. Sprinkle on liberal amounts of lemonpepper. Sprinkle on some fresh finely chopped rosemary and basil. Close up the fish and wrap in aluminum foil. Then bake it at 3050 degrees for about 15 minutes. when it's done, unwrap the fish, put it on a plate and remove the bones. They should come out pretty easily. You can also add a couple strips of bacon before wrapping the fish, if your diet allows. Sometimes I use fresh cracked blackpepper and juice of half a lemon instead of the lemonpepper. Growing up in Wyoming, I ate a LOT of trout growing up and this was like a family recipe. Also, be sure to use FRESH herbs...so much better flavor than the bottled kind... |

Leave the fish whole.
In a large ziploc bag, place the following: 1/2 - 1 cup Soy Sauce 3 - 4 Cloves Garlic, Crushed Fresh Ginger Root, Sliced Green Onion 2- 3 T Rice Wine Vinegar Marinate 2 - 24 hours. Cook the fish whole on grill or in oven. Stuff the cavity with garlic, green onion, and fresh ginger prior to cooking. |
