Si, the lesson is always "Follow the Money".

Great thread btw, thanks for starting it!

The Story of the Weeping Camel is a good one. Long, but worth it.
Control Room if you haven't seen it yet, though it's somewhat dated now.

Conspiracy (a recreation of the Wannsee Conference)

Beyond the Steppes (the writer/director based the story on the life of her grandmother.) (worth watching!)

The People Vs. Larry Flynt

Das Experiment (A psychological experiment in which test subjects are divided into "prisoners" and "guards". Story based on the 1971 stanford experiments.)

Dirty Pictures (A museum curator on trial for displaying "obscene" photographs defends his free speech rights. Based on a true story.)

and: Mr. Smith Goes to Washington (fiction, but banned in a lot of countries because of how critical it was of certain political practices)

Not one listed above is a documentary...

Senna is definitely one of the best in the last few years.

If you like "American Movie" you'll love "Overnight"

Overnight

A documentary on the rise and stumble of Troy Duffy, the bartender-cum-filmmaker who was swept up by Miramax's Harvey Weinstein to turn his script for The Boondock Saints into a feature film.
The guy who stars in the doc blew one of the biggest chances anyone will ever get because of his ego.

Other notables off the top of my head:
Man on Wire
Hoop Dreams
When We Were Kings
The Thin Blue Line
The Times of Harvey Milk
Project Nim
The Interrupters

I'm a huge Documentary fan. I have a ton more that I can't think of right now. I'll also quickly recommend pretty much anything by Louis Theroux for some light viewing.
