Not only that but the sensory organs such as the ability to see to target prey (living humans) is dependent on working eyes which work in conjunction with a working brain...neither of these zombies have.
Simply ruins the entire concept of the zombie movie for me I am afraid.

I like to think that Zombies have their body-state "frozen" when they become infected and it's over a period of time that their body becomes damaged by the elements, disease, bumping into stuff etc, until the "virus", or whatever agent is used to turn them into the Zombie, itself dies/fades and rapid decomposition starts to take place.
If you look at the "Zombies" in 28 Days Later (ja, I know some don't think of them as Zombies) for example they are infected with a virus that causes them to go berserk, so they could last a pretty long time with full motor functions and be able to sprint etc. If you then look at Romero's idea of Zombies from Dawn of the Dead they get infected and over a period of time their bodies start to degenerate into the typical "zombie" look.
Having said all that, it's a Zombie movie, best not to over-think it and just enjoy the action :)
