So guys, how do youy like your steak ??
I like mine medium rare, heat the bbq up as high as she will go, then place them on my cast iron grill, making the criss cross as I cook.

Tenderloin = Black and Blue
Strip = Rare Rib Eye = Med Rare Pretty much the higher you go up in fat, the more I cook since you want some of those fats rendered down. As for the charred meat causing cancer, that's too bad because it tastes soooooo good. I make fun of the people that eat their steak well done, but according to my doctor, if you are going to eat red meat, its best to have it on the well done side, as most of the fat (and also the flavor,*sniffle*) are gone by that point. So looks like they will have the last laugh as they out live me. |

Rib steaks are marbled. :) Medium to medium rare for me. Lot's of Montreal steak spice. |

Medium rare for sure...gotta have that pink. Last summer I got hooked on using this brown sugar bourbon marinade - so delicious on the grill - a nice side of mashed sweet potato and some asparagus. Ah, can't wait for the nice weather again.
