No, making someone turn out their pockets is not violating any civil right what-so-ever. Almost every club in the state I live in has a sign posted saying that they have the right to search and customers for any reason at any time. The MAIN reason for this is weapons as it is highly illegal to carry in a bar, another reason is drugs, and the last legit reason would be for other weapons other than guns.
You can't just take the money from the guy, legally. What you can do is threaten to call the police and have him arrested for trespassing, or tell him that by law you are required to report when a patron has had too much to drink and tries to get in his car after you offer him a cab. Honestly I've never had a problem where the guy HAD the money and wouldn't pay. They usually don't have the money, or the girl gets called to the stage and the guy sneaks out.
Doormen at clubs have a LOT of duties, most of which include cleaning. So keeping track of even 10 dancers, 20 customers, getting yelled at by a manager, checking ID's at the door, helping waitresses clear tables, re arranging chairs etc you get a little backed up and can't see everything all at once. Although some clubs do have a person whose sole duty is to keep track of dances. Sometimes it's a waitress, sometimes a doorman.
It's a lot to get into but the cliffs are that legally you can search them on the pretense you are looking for weapons - though it's a civil matter between the stripper and patron if she decides to try to get the money from him and the best thing you can do is threaten to make his life hell if he doesn't pay up and then ultimately refuse him service ever again.
Strippers are pretty fucking stupid but even they know better than to call the police to the club they work at. Most of them run to the back even when City Health Inspectors or Liquor Board walks in
