hard boil 12 eggs.
make a brine consisting of
3 cups water 3 cups vinegar
1 tb salt
3 tb pepper and several peppercorns
*maybe* a tsp of mustard seeds
boil, then simmer for 10, remove from heat
(you can add some pickle juice or beet juice to get some color here too)
peel the eggs and add them to brine in a big container and put in the fridge for 2 days.
after 2 days, slice eggs in 2 lengthways, remove yolks.
I make a very classic deviled egg with these, no need to get fancy with the yolks since the eggs are pickled.
1/2 cup mayo
2 tsp vinegar
2 tsp yellow mustard
mix that up and spoon back into the halves.
black pepper and paprika sprinkled on top.
*maybe* some capers
If you can get 24 hour fresh eggs for these, wow!
