:stoned Who wants to make Spaghetti Sauce from scratch? Recipe inside! [PICS]


Spaghetti Sauce

Ingredients


Measure 1 Cup of Extra Virgin Olive Oil

THEN SUBTRACT FROM THIS 5 Tablespoons of Extra Virgin Olive Oil.

So you will have: 1 CUP MINUS FIVE TABLESPOONS of Extra Virgin Olive Oil.


Measure 1/4 Cups of white sugar
THEN ADD TO THIS 1 1/2 Tablespoons of white sugar.


So you will have: 1/4 CUPS of white sugar PLUS 1 1/2 Tablespoons of white sugar.





4 good sized regular tomatoes



3 Roma tomatoes



1 Green Bell Pepper




2 stalks of Fresh Parsley



2 stalks of Fresh Thyme




2 stalks of Fresh Basil



Half of 1 Red Onion (good sized)

2 Cloves of Garlic

2 Tablespoons of Honey

2 Tablespoons of Balsamic Vinegar

2 Tablespoons of Red Wine Vinegar



1/2 Pound Fresh Mozzarella Cheese

OR

1 stick of Goat Milk Mozzarella Cheese

( I used regular mozzarella cheese here. )


1/4 to 1/2 Pounds of Ground Chicken ( Breast Meat )

( I used 1/2 Pounds of Ground Chicken here. )

5 Mild Chicken Italian Sausages

3 Teaspoons of salt

3 Teaspoons Black Pepper


Procedure

PART 1


(a)



Dice Onions and Garlic and set aside.


(b)



Dice Both the Regular Tomatoes and
Roma Tomatoes. Put in one bowl and set aside.

(c)


Dice Green Peppers.

(d)


Remove leaves from sticks and dice your Thyme

(e)

Remove leaves from sticks and dice your Basil

(f)

Remove leaves from sticks and dice your Parsley

(g)

To your diced green peppers add: your diced Thyme,
Basil, and Parsley and mix and set aside.

(h)



Remove skin from sausages.
( I find it easier to remove skin from
sausages frozen or leave for a short time
in the freezer to chill - about 45 minutes. )

(i)

Cut your Chicken Italian Sausage into chunks
and add to your ground Chicken and set aside.



(j)

Cube your Mozzarella Cheese (if you have to).

and set aside.

( Pre-shredded Mozzarella Cheese is also fine )


PART 2



(1)



Heat your Extra Virgin Olive Oil under
MEDIUM HEAT until medium hot.

( My heat settings range from
1 - 10; I used "5". )

My oil heated in 6 minutes.


(2)




Pour in your onions and garlic and add a teaspoon of
salt and add a teaspoon of Black Pepper. Stir occasionally
and lightly brown.

This took me, 13 minutes.

(3)




Add cut up Chicken Sausages and ground chicken
to browned Garlic and Onions.

Immediately add your...

Salt ( 2 teaspoons )

Black Pepper ( 2 teaspoons )

Add your 2 Tablespoons of Balsamic Vinegar


Add your 2 Tablespoons of Red Wine Vinegar

Add your 2 Tablespoons of Honey

(5)

Cover and let cook through.
Stir occasionally.





This took me, 13 minutes.

PART 3

(i)



After Meat is Browned add your Green Pepper Mix:

That is your Green Peppers / Diced Thyme / Diced Basil / Diced Parsley

(ii)

Cover and let cook ... For about 5 - 8 minutes
or until green peppers soften.

This took me, 8 minutes.

PART 4


(a)



Add your tomatoes then white sugar and stir.

Cover and let reduce over Medium Heat

for 30 Minutes. Stir occasionally.

( My heat settings range from
1 - 10; I used "5". )

PART 5

(1)



Add your Mozzarella Cheese and
REDUCE HEAT TO LOW

( My heat settings range from
1 - 10; I used "3". )

( NOTE: With mozzarella cheese, please
watch it carefully. Please stir more often.
)

(2)

Cover and let cook for 30 more minutes.
Stir occasionally.

Turn off and remove from heat.





Your Spaghetti Sauce is now done!

You'd be kicked out of any Italians house for even mentioning that recipe.

Sugar and honey? maybe a scant teaspoon of sugar if your tomatoes aren't any good.

Instead of the empty sugar calories, use meat on the bone cook long and slow, about 2 hours then the meat just flakes into the sauce, also you only need a very small amount as the bones have released their meatyness, really small amounts of meat something like 1/3 lb of sparerib 1/3 lb beef rib these include the bones so less meat that that. with more tomotoes, atleast 2lb or 2ltrs of passata. this will feed 8.

More tomatoes, a lot more tomatoes, use a passata if not in peak tomato season.

Vinegar. not really needed if you cook the tomato down slow, but a splash of balsamic doesnt do any harm.

Much easier, learned in Sicily.

One onion, cut very finely
2/3 cloves garlic, ditto
good glug of olive oil

sweat them on very low heat for at least 30 minutes, stirring every 5 minutes or so

add a load of tomatoes (skin removed, do this by blanching in hot water for 60 seconds)
tomato puree (2 or 3 tbsp)
large glass red wine
good handful of fresh basil
teaspoon of sugar
good pinch of salt
big grind of pepper

let simmer on very low heat for 2 hours, stirring every 30 mins

add some more fresh basil at the end

that's it. learned from Italian in Sicily.

Mine.

Olive Oil and Garlic in a pan
Add chopped onions, stir until brown
Add a small can of Tomato Paste
Add San Marzano (this is key) whole tomatoes and cook them down
Add a pinch of Red Pepper
Salt, pepper, oregano, basil to taste

DONE.

If you want to turn that into a bolognese

add finely chopped celery and carrots when you add the onion
add ground beef, ground pork, veal, or lamb after you cook down the veggies
follow the rest of the instructions
cook for 3-4 hours add nutmeg to finish
