No but have eaten wildlife... well farmed. kangaroo, I would think buffalo would have a worming issue.

Yup.. Bison, like most game.. you have to cook it rare med-rare max or it dries out and gets tough.

This is what I thought about it too- it is like a rich and very dry beef to me. I only ever had it one time, but wasn't a big fan - but am told it's a lot healthier because it is more lean.

They sell it here at a place called Bovinos. Each time I have had it, it has been great. But its a Churrasqueria so they are made different from what you guys are getting.
Its more of a cut than a steak.

I haven't had steak, but I am a fan of buffalo burgers. I never found them dry, but I like my meat on the more rare side. Very tasty, and I like the health factor as well.
Going to have a venison burger for lunch today.

You mean "Bison Meat"
They don't normally call it Buffalo Meat on the menu... Shouldn't be to hard you find it being served, It is a little drier than Beef. But depends on how it's cooked. |

theKing, I've had buffalo burgers in the past as well as bison (a roast if I recall, it's been a while). No worries with the burgers but you have to know how to cook the steaks and roasts. In that regard I found it similar to moose and elk, in that they're all somewhat leaner meat than beef. I cooked the roast by first searing the outside of it in a pan, then cutting slits in it at all angles and stuffing them with pork fat (bacon, preferably), then cook it in the oven just like you would any other roast. I did this with a moose roast a while back and it turned out to be the best damn roast I've ever had. Bison meat is very expensive here now. It's like $17 a pound last I checked. All farm-raised though, so had to LOL at the "worm issues" comment. :D

I went in with some guys that shot a buffalo, or Bison in Oregon years ago, filled up my freezer. Tastes good, I had some recipes that said you had to be careful as to not dry out the meat. Very lean, not much fat. I would do it again.
I've had Bison, Elk, Venison, Moose, Squirrel, Snake, Monkey Brains in the Philippines, all sorts of foul, always up to try someone different http://www.fullcirclebisonranch.com/ if you want to order some, they ship!

Carbon is not the problem, it makes up 0.041% of our atmosphere , 95% of that is from Volcanos and decomposing plants and stuff. So people in the US are responsible for 13% of the carbon in the atmosphere which 95% is not from Humans, like cars and trucks and stuff and they want to spend trillions to fix it while Solar Panel plants are powered by coal plants think about that |
