We know what is going on through observation and measurement.
only 4% of the universe is understood by humanity at this time. and of that 4%, Hydrogen and helium are estimated to make up roughly 74% and 24% of all baryonic matter in the universe respectively so that leave a VERY small % that WE are able to observe and measure... 1% maybe...
