Hate Mayonnaise?

We had some guests over for dinner last night. Was a off shoot of a french dip sandwich, very slow cooked roast that was braised in an onion soup then shredded. Served on small rolls with sliced onion, avocado, and homemade mayonnaise. You use braising liquid to dip your sandwiches into.

Now apparently one of our guests hates mayo though I did not know this. I had already assembled her sandwich and she gobbled it down, mayo and all. She actually kept going on about how much she liked this white sauce. I finally said it is some mayo that I made and she refused to believe it at first then she went in and tasted it straight out of bowl. She still loved it yet says she hates mayo, or as she clarified she guesses she hates mayo in a jar now. She even had me write it down for her. Her husband was also happy as she never buys it and he likes it, so now he can have it again too.

I am curious, how many of you have had homemade mayo or is all you ever had was store bought oh and do you like mayo?

I am not a big mayo fan myself but I will happily convert. I've only ever had mayo from a jar...as far as I know.

went through a phase when i was a kid where I hated it with all my heart .... We were camping ..mid summer, extreme heat, riding in the back of the camper on some pretty bumpy roads up in the mountains.. Someone had put the mayo in the cupboard instead of the fridge and it was forgotten *for god knows how long*.. Well one to many bumps and the mayo came flying out of the cupboard, the jar broke on the table and splattered the smeg all over me ..warm ..1/2 gone off mayo .. well at 14 yrs old or something i was just mortified and was puking everywhere .. screaming at "Mom" to stop the truck and let me out the back .. It took me about 6-8 years to get over that smell ..now i love it again .. nothing like a few extra calories on my fat ass ..

Normally when I buy a sandwich that contains mayo they add too much. It's easier to say no mayo because that's the only time I hate it -- when it's coming out the sides each bite.

I am really more curious if everyone has only tried the stuff in a jar. PS miracle whip does not count as either and everyone can hate that.

I personally think the stuff in a jar is just fatty and bland.

I am a mayo hater.
Never bought a jar of it in my life. Never had any homemade that reversed the feeling though it's not something I try to do.

Carbon is not the problem, it makes up 0.041% of our atmosphere , 95% of that is from Volcanos and decomposing plants and stuff. So people in the US are responsible for 13% of the carbon in the atmosphere which 95% is not from Humans, like cars and trucks and stuff and they want to spend trillions to fix it while Solar Panel plants are powered by coal plants

Hated it as a kid, but in the past ten years with more fat on my body I like eating almost everything, especially fatty stuff.

Never had homemade mayo, but it and the sandwiches sound delicious.

If you don't live in the South you won't be familiar, but the best store bought mayo you'll ever taste is BAMA.

If I'm somewhere that doesn't carry it, the only other kind I'll buy is Hellmann's.

Nah if I have to have jared that is my default typically. Just a little info for those that do not know. Sort of like how I think it is Hardee's on the east coast is Carls Jr on the west coast.

Hellmans is terrible. Hard to get good store bought mayo but you can get some ok olive oil / canola ones in whole food and similar places.

Kinda weird to hate mayo.

i use miracle whip in my sandwhiches and mayo for stuff like potatoe salad. my dads ex wife used to make homemade mayonnaise which was so yummy but never got her recipe.

Base recipe: Changeable by adding herbs, small amounts of speciality oils like chili etc.

1 egg yolk
1/2 teaspoon salt (no kosher this time)
1/2 teaspoon sugar
1/2 teaspoon dry mustard
2 teaspoons fresh lemon juice or 3 teaspoon lime
1 tablespoon white wine vinegar (swappable for others at 5% acidity)
1 cup oil, neutral oil such as safflower or canola. (avoid olive)

Dump egg and dry ingredients into food processor or blender (call it insurance on emulsion) and pulse a few times until a little lighter in color. Add vinegar and lemon juice, pulse once or twice more. Then turn on and stream in oil.

Now the WTF part. Cover it and leave it at room temp for an hour or two. Do not worry it is high in acid so it will not spoil. Oh if you have egg worries (raw) you can get a pasteurized one though risk is damn low.

Place in a jar (small mason works) store in fridge for a week or so. Discard after say 10 days if you do not use it.

You can always hit it with hot sauce, herbs like tarragon work well, etc. Just a base like I said. If you really want to hand whip or do not own a blender or food processor then assembly is a tad different.

BTW it is shit loads cheaper than store bought.

I like both real and store bought mayo...too much. Which is why I only allow myself to buy the smallest jar of the light mayo I can find a week because if there is more there I will find a use for it. Especially after I moved to Europe and embraced the whole mayo with fries thing.

I hate mayo. Like hate hate hate it, and it's ruined a lot of meals for me.

I have noticed it's used much greater in the U.S as opposed to Canada.

BTW it is shit loads cheaper than store bought.
Yep that's how I make mine except I use dijon mustard instead of dry. It is way better than the crap in a jar. It's really good topped on scallops and then bake them.
