Shouldn't be too tough. Gorilla has decent docs and admin to make the customizations pretty easy. I do hate themes that look so 'bloggy' though.

definitely doesn't look horrible

as for something simple/complicated, nothing in wordpress is too complicated to handle even if it requires some catching up
