Thanks, but a load of corn syrup I can do without! Also, I doubt they would deliver to England by tomorrow!

I wanted to make it, you know, using ingredients and mixing them together to produce something!

Little Brother's Jack Daniels BBQ Sauce

1 bag dried chilis (choose variety to match your taste, hot-medium-mild)
1 20 oz. bottle ketchup
1 pint Jack Daniels Tennesee Whiskey
1½ tsp Liquid Smoke
1 large onion, chopped
1 large carrot, diced
1 head garlic, peeled and chopped
1 tbsp toasted cumin
1 tbsp black pepper
1 tbsp cayenne pepper
2 tsp salt
1½ tbsp brown sugar (more sugar with hot chilis, less with mild)
1 cup white wine
1 cup apple cider vinegar

Remove the tops from the chilis and shake out as many of the seeds
as possible. Caramelize the onions, garlic, and carrots in a large
sauce pan. Add the remaining ingredients and simmer uncovered for
90 minutes. Use a hand blender to reduce the remaining larger pieces
to about 1/8" bits. Simmer for another 90 minutes. If sauce is still
a bit thin add more ketchup. Allow to cool then store in glass
bottles and refrigerate. DON'T GET NONE ON YA!

What protein are you looking at cooking, and how are you planning on cooking it?

Chicken. And over coal.

I just want the dipping sauce for after as opposed to a basting or marinade.

Thanks!

Sounds good. I'll try that I think, but swop out my fresh chilli from the garden for the dried.

Thanks!

My most recent favorite was some Carolina BBQ. They had a ketchup based and vinegar based that I need to find a recipe for myself. Was a bit different than your ordinary BBQ sauce but very delectable.

I just use Ken Davis It is about the only cheap commercial one with a sugar base rather than corn syrup. Agreed, corn syrup is a no no.
