every year i grow my own peppers, harvest them, and either peel and freeze some or dry them and use them over the year.

peppers are one of the only things I like to grow have been doing it for awhile now and have way more habanero than ill ever need LOL got a pantry full of jars of them dried lol

needlesstosay ive made bucket and buckets of homemade salsa over past few years heheh

I would highly recommend you try to make some "Ceviche" with your home grown Habaneros, it is absolutely amazing.

Herdez is actually pretty good, I buy it.

This summer I grew Ghost Chili's in my garden and had no idea what to do with them. My neighbor a few houses down is from Mexico so I brought a bag of them over and said "Here ya go"

3 days later I saw him in my backyard watering my plants and picking more. He was in love with them. He brought me a bunch of Salsa that his wife made with them. While I can say it was pretty fucking hot, I could handle it. It was the next day I was in agony.

I almost always go with fresh salsa versus bottled
I make equal amounts of mild/medium and hot/extra hot
For some dishes, they don't need all the extra heat...but for those that do, I like to break out my fresh red pepper/habenero salsa with a little bit of honey for some sweet to go with the ass burning heat...

You can make a very simple salsa at home with somewhat fresher ingredients...

Buy:

Hunts petite diced tomatoes in the large (medium) can.
Ortega diced jalapenos. Use half and then add to taste and temp.
Green Onions (you want the white portion diced small).
Cilantro (diced)
Avocado (cubed)
Limes (squeeze two into the salsa)


Or switch things up in hotter times with a cooler salsa...

Same tomatoes as above
1 mango sliced and diced
1 can of corn
1/2 cucumber chopped and seeded
A few jalapenos diced
Small pour of olive oil
Cilantro chopped
lime juice and pepper to taste

Valentina is the closest i have come to finding a hot sauce that was the closest, least chemical tasting to the ones I had while living in Mexico.
