Filter...using hue/saturation...then pen tool around the area you want coloured...grab your lasso tool, right click...select inverse, this should select the colour part if you make the penned layer invisible. create new layer, copy and paste your inverse selected part back to its place and line it back up into the original layer, then hue/saturate it back into colour.

I do it with an old copy of Aldus Photostyler. Open two windows of the same pic - convert one window to B&W - then clone from the B&W window in to the color window, leaving the areas you want in color.
There's likely easier ways...but that's the way I've been doin' it for a decade or more. |

I don't think you have to mess with the colors.
Open the pic, cut out the part you want in color, paste it on a new layer, then put a BW copy of the original pic under that layer. You can mess with the hue and saturation if you want more vibrant colors. Now cutting it out can be tough depending on how complicated it is. You can use the extract filter or do it yourself with the pen tool (most exact) or lasso tool.

Figured there would be a whole bunch of different ways and I was questioning the way I had done it in the past since I often have picked ways to do things before that were more difficult than they should be. Guess my original way seems about as close to the easiest way to do it. only step I add to the desaturate and history one is some use of the lasso.

add a black & white adjustment layer above the original pic...
with the adjustment layer selected paint with black parts you want to be in color tweak til you're satisfied. done. |

You can duplicate the photo, then make the bottom layer b/w. Then remove all colours from the second layer besides the colour you want to keep in the Channels part. Erase parts that are still coloured that you don't want to keep coloured.

Can work depending on the image. But edges aren't always flawless with lasso, especially if magic wand doesnt pick up everything and you use a high tolerance.
