Oh donkevlar since you mentioned Japanese look for Morimoto the new art of Japanese cooking. It is a monster sized book close to 300 pages if I remember (in the kitchen). Good to read, not super hard to follow, and his food does taste incredible.

I just turn to GFY when I'm looking for recipes. Trust me, I stand by my word, tis place may be full of idiots, but some of them know their fucking food. GFY always pulls through when it comes down to food...
