How do we know any of them are right?

Verse 19 of Leviticus 18:22 forbids sexual activity with a menstruating woman as it is a sin. I've never done that.

So I'm good to go, right? I'm not worried about the rest of the Bible as I still have both of my eyes and all of my teeth, don't covet my neighbor's wife or do much of anything except sit in front of my computer.

I am awaiting Donny Pauling's wisdom. He found God like five years ago and now has a 20k volume library on religion. That means he's bought an average of 11 or 12 books a day on the subject. He mentions on his blog that his income is way down and it's a struggle but he can spend $100/day on books so things can't be that bad. He certainly wouldn't lie about his library because good Christians do no such thing.

Actually, the laws God made are different from the laws man (moses and others) made. The rough categorization for this is the moral law versus the ceremonial laws/ordinances. Most, if not all, of the Internet posted stuff like stoning a menstruating woman and other types are of the latter kind. Of course, there are also pre-Noah laws like the Sabbath and dietary laws.
