Well, I was up north this weekend. I only found 3 Chanterelles and they were past their prime. 1 looked like a deer had taken a bite out of it.

On the other hand, the fishing was fantastic :-)

I just cooked up some puffballs this weekend (and even blogged about it!) I love them because they are easy to identify, find, cook, and also one mushroom can feed an army. Not sure I would trust myself to go mushrooming for anything else though I will take some photos of any fungi I find.

What is the recipe? I do not pick them, again - does not look like "quality" mushroom to me That is, of course, just subjective opinion based on the looks of it

They sell for a pretty hefty price.

A salad I bought yesterday: mushrooms, eggplant, peppers, carrots, cabbage, parsley, dill - tasty, healthy and organic food from farmer's plants (no GMO shit)

It's fucking Indiana; they fry everything or cover it with cheese.

Like I said, after she cooked up the first batch we gave them all to her dad.

Like I said above, they are pretty pricey. I can only presume that the price is solely based on how hard they are to find.

You guys from other states do it too. When I've been to Louisiana, I ate a crocodile and was barely able to feel a taste of meet, because it was fried in batter. I really hate your way of cooking...

Everything in the South is fried.

My guess is it's an old tradition carried over from when food was scarce and they needed to spruce up things like raccoon, possum, etc. It is tasty, but with good quality meat you can certainly make a much tastier dish without batter. I stay away from it myself, I'm more of a meat purist.

So I went mushrooming for the second (and probably last) time this year.

This time most of the mushrooms were great ones:
https://en.wikipedia.org/wiki/Lactarius_deliciosus

I posted about king of the mushrooms - king bolete, but these are also in the top of the top of the food chain. Many/some people and experts value them even more than bolete.
As the name in latin suggest - they are delicious!
Contrary to the mushroom in OP, these ones does not seem to be mentioned in wiki as the ones that could be found in the states. Of course wiki is not always right Maybe someone will post the contrary.

I don't know French but in Russian and in English it always means Agaricus Bisporus (aka champignon mushroom).

I enjoy doing it each fall. Just picked a huge batch of these ones:

https://no.wikipedia.org/wiki/Traktk...is_Karonen.jpg

https://en.wikipedia.org/wiki/Chanterelle (second favorite)

https://en.wikipedia.org/wiki/Boletus_edulis (favorite)

https://en.wikipedia.org/wiki/Hydnum_rufescens (close in taste to chantarelle - awesome, and you cant go wrong)

https://en.wikipedia.org/wiki/Leccinum_versipelle (close to porcini, but needs treatment to avoid stomach issues. Tastes great)

And a few other ones I am confident I wont get in trouble eating.

Picking mushrooms is to me like others do meditation - and I also love cooking with them. Glad seeing others appreciate the good things in life as well.

Respect

I love 2nd, 3d and 5th in your list (as most/all of the mushrooming guys do).
1st and 4th are unknown to me, everything that looks like Chanterelles I do not take, as I know at least one of them are bad, and I am not an expert on determining which, so I do not take anything similar to Chanterelle at all

Yes because they cook the same way across the entire country.... Louisiana has some amazing food, yet you chose to eat fried crocodile.

My Mother-in-Law's neighbours gave us a huge basket of wild mushrooms. Made a delicious Mushroom and Potato soup, Pork and Mushroom pie, Chines Port and Mushroom and battered mushroom.

And the Apple Tree has a bumper crop this year. So looking for recipes.
