I am not a big fan of those, tried to give some up to friends, fun fact - every single one said that they do not like zucchinis as well. It seems like it is the most not liked vegetable of all ![]() Anyone likes them? And now I need some good recipes ![]() |

I also kind of like them, but in a way that I am definitely not excited about eating them. Meaning that they won't hit my top 10 favorite vegetables list for sure

Grew up on them and love them. 2 biggest ways I eat it:
1. Egg sandwich: Slice it thin, saute it in a pan with lots of onions and some garlic. Maybe some ham if you want. add eggs and parm cheese at the end and scramble it up. Put it on some soft italian bread wonderful egg sandwich 2. With spaghetti: Slice it thin, saute it until its crispy with onions and garlic, service it with spaghetti, butter and parm cheese. ![]() |

zucchini bread, muffins, used as a topping on pizza, sauted with some oil olive makes for a good side vegtable along with some peppers, bread them and make zucchini sticks, etc.

I like them when small especially the yellow ones, either on the BBQ for dinner, or pan fry with olive oil and put in an omelet.
When they get big I make chocolate/Pineapple/zuccini muffins or zuccini bread. |

soups, both of them go great in soups.
leeks, potatoes, salt pepper zucchini cook in a bit of butter and then add water or stock. cooks slowly until all soft. Blend and add cream... Pumpkins. Onion, red lentils, garlic, pumpkin, salt, pepper. cook in a bit of butter and then add water or stock. cooks slowly until all soft. blend, the pumpkin makes it creamy. |

Crazy. So much you can do with zucchini. I love it, and it's the easiest veggie to grow! I always end up giving lots away with just SIX plants each year.

i will ribbon them out and use it instead of pasta. It goes perfect with most italian sauces. You can buy gadgets that will shape them into noodles but you could always just chop them up coarse and cook them up that way. let it simmer on low in the sauce so it takes in the flavour maybe a splash of wine at the end. They will work in a stir fry as well.
pumkin is a bit more of a complex flavour, the only thing i have ever liked with that stuff are the desserts but usually they require a lot of sugar. pumpkin pie, or tarts for example.

yeah but as someone already said, it depends what you do with these things right? I really don't like cauliflower on its own but it is surprisingly versatile. I can use it as a mashed potato substitute, pasta substitute, rice substitute (use a cheese grate and simmer it up in broth and it makes a half decent 'risotto' that isn't so starchy) I've even made it into a toast substitute--Although I don't recommend that to anyone, the process is too time consuming unless you have a dehydrator at home anyway.
