Hey cooks - red beans and rice recipe?
I'm making red beans and rice. Never made it before.
I found this recipe - sound about right? 1 cup uncooked long-grain white rice 2 cups water 2 tablespoons butter 1 onion, chopped 1 small clove garlic, minced 1/2 green bell pepper, chopped 1/2 teaspoon cumin 1/2 teaspoon cayenne pepper 1 teaspoon chili powder 16 ounces smoked sausage, thinly sliced 1 (15 ounce) can kidney beans, drained 1 (14.5 ounce) can diced tomatoes, undrained I'm cooking my own beans, also.. |

With the sausage. Polish Kilbasa works well and will add some nice flavor. Dont forget to add salt and Black pepper.

I guess that recipe would qualify as red beans and rice, would not be what I would expect from red beans and rice though.

and celery, pickled pork (or ham hock), thyme, bay leaf, worcestershire, some crystal or tabasco, and then a spice blend (onion powder, garlic powder, oregano, thyme, basil, black pepper, white pepper, cayenne, celery seed, paprika).
I would not use liquid smoke, cumin, chili powder, tomatoes, nor canned beans. Very hard to get the creamy texture with canned beans. Also would go with a hot sausage or andouille as the sausage. Also would make some pickled onions to go with it, and if your really in the mood some additional fried sausage patty or chorizo or hot sausage patty to serve with it.
