You are dead nuts on the money about coconut oil. I grabbed a large container of it (1.7 litre, or 54 oz, virgin, cold-pressed) several months ago and hadn't tried it. Then a few weeks ago I had a fish fry and decided to crack it open and try it. I tell you that was some of the best fish I've ever eaten, and I've had a lot of fish in my day. That oil made it just that much better.

I wasn't even sure about it's smoke point, but it seemed to heat up hot enough just fine, so it must have a higher one than olive oil.

Damn healthy stuff though.

Yeah I got it from a different isle, but I opted for the not extra virgin one - I think the one I got was Louann or something - but it wasn't the extra virgin kind. It started out me trying to make popcorn taste like movie popcorn and then I found out how healthy it was but what I got tastes terrible. lol

I'll be hitting the grocery store up tomorrow and we start a whole new diet and better eating - thanks to all of you here.

The wraps I think, are some of the first things we'll be going towards - my husband has been pushing those for awhile, I guess I'll take him up on it with her. lol

EXACTLY what I was thinking - I know I've seen hit and miss issues where some of you have had health issues and had to make drastic changes - and I knew no one would be better than my friends here.

SHE, as it happens, is in a similar business as far as the body and activity levels are like the rest of ours. She does Art/graphics work online and is taking up jobs, learning business and so on s0 she is in a similar situation as we are in that we sit and aren't as active as most humans - her business is online as well. lol

Very stupid question - this wonder item, coconut oil - it isn't even remotely supposed to have a coconut flavor, right?

I don't even know how to describe the flavor of the one I bought, but it was kind of like an oily wang flavor, maybe is the best way to say how it was... and d I mix it with anything to make the popcorn or just that? One place I found said t mix it with vegetable oil or whatever - maybe THAT is where it went bad wrong? lol

Be careful with oils... any oils. They're 100% fat so if you're trying to lose weight, you don't want to be indulging in a lot of oils.

I don't use a lot of oil - only fry food once in a blue moon - and am more careful than some about it. I am not supposed to have a lot of it either, so that was already on my list of things to watch out for.

Well, having never tasted oily wang, I dunno, haha.

There will be a MILD coconut flavor, and I even hesitate to refer to it that way because of the extremely mild character. It's enough that I choose olive oil for my pasta and pizza sauces that I make from scratch. Everything else though is coconut oil for me. I'm not in great health or good shape though, but when I was in the hospital in May the nutritionist / dietician was impressed with my lipid panel results.

One cool property is that even if you overheat it, it does not break down into bad components like other oils, ie: vegetable.

It's killer in cookies and cakes, not that you'll be making a lot of those, but I'm just saying. Great for eggs and other every day frying if you do that.

Baked french fries/ Roasted potatoes. Theres a myth that white potatoes makes you fat because carbs turns into sugar and sugar turns into fat. Not true at all. When I ate 2 meals of potatoes a day the pounds fell off me at a rate of about 5-8 pounds a month with no exercise.

take regular white potatoes, slice them into french fries, sprinkle them with an even mix of onion powder, garlic powder, paprika, chili powder. No salt, powder only.
NO OIL. not even olive oil. oil makes you fat, dont believe that "olive oil is healthy", its just marketing to make sales. theres a lot of studies that even EVOO clogs your arties a few hours after eating it.

bake them till they are as crispy as you want, i like 450 for 30 minutes.
use regular catchup it has no fat or oil in it.
eat as much as you can and all the potatoes you want. the pounds will fall off.

fat makes you fat. Thats why asians who eat very little meat and oil are thin and people who eat lots of animals and oil and cream are fat.
Carbs from real food (potatoes, rice vegetables, fruits) make you thin.

All those things are extremely bad for me, potatoes aren't SO bad if they are younger, new, potatoes - less starch - less sugar for my Diabetes and her Dr said for her to eat as close to me as she can until we find out exactly what is going on - they do say she isn't a Diabetic though - so that is one good thing - just hope we aren't trading one thing for a worse thing here.

I have been roasting her carrots and potatoes with a roasted herb and garlic seasoning I found and it's filling her urges pretty well.

Lean beef. Boiled pork. Roasted Chicken.

Get a rack where the drippings can leave the bird/beast behind.

Rice - you can make a roux or any rice flavoring with a tablespoon of oil and then stir it all up with your spices, meat, fish as you wish.

Things like scrambled eggs - with the right pan you don't need to grease it, just scrub more when you wash boohoo - I serve hot with cold sliced tomatoes on a bed of fresh, cold chopped lettuce ( I like hot/cold mixes ).

Instead of bread I use corn-based and baked things like tortillas for wraps or pick-up, plus you can always think ethiopian - injira bread and the meals it's used with are awesome.

That's off the top of my head. You can make chile with tofu-based ground "meat" and fill it with vegetables, beans and peppers, and if you want lots of tomatoes - depends on your preference.

Plus kids love nacho/tortilla chips...

So much more here to exchange... I read every post for a change lol and now I'm hungry!

Something healthy I've recently gone crazy over is Sardines, I tried them once as a kid and thought them gross. Then a couple of months ago I gave them another chance and fell in love, I'm now eating 2-3 cans a week or more. According to what I read they are very good for you especially when soaked in olive oil, and it definitely satisfies my fish cravings at a much cheaper price. Some evenings when I am starving I can satisfy myself with a salad, a couple of pieces of fruit and a can of sardines and I'm nice and full.

The bread thing I don't see she and I missing so much, neither of us are that much really into bread - the pasta thing she is going to have shits and fits over, I know I did - and no one will ever touch my potatoes. lol

My youngest son loves these things - he likes them in hot sauce and my husband used to eat them a lot, I think he likes them in some kind of mustard sauce - to me, they just smell nasty and look like greasy ass cat food. lol

I remembered one thing, not maybe exactly what you are looking for, but here it is.

I have been eating two kiwifruits in a day since I read about a study where the kiwi fruit eating part of the study fealt happier, their spirit was better, etc. (they ate the 2 fruits per day). In simple word, their mood was better. The reason is the effects of vitamin C, and kiwifruit is full of that.

Supplementary vitamin C is not exactly the same the stuff as the natural vitamin, so I have decided to eat kiwifruits, as those are healthier and healthy stuff anyways.

i stick to a few things in general

-oatmeal (not the instant kind) for breakfast with bran buds for extra fiber
-salad for lunch with yogurt and fresh fruit/vegtables

for supper
-limit your red meats
-don't eat pasta more than once a week and use whole wheat pasta and brown rice
-watch other carbs like potatoes and rice
-don't eat anything boxed or frozen (other than frozen vegtables)
-use olive or coconut oil for cooking instead of vegtable oil

just some basic rules i try and watch
also watch your sugar and sodium intake

Ok, whew - that shit is SO expensive and I wasn't looking forward to taking it and tossing it in the bathroom for hand cream... lol

I put some other oil in with it, so it is very possible whatever I mixed with it is what messed it all up - I am going to try it soon and see, I'll let you know.

And as a matter of fact guys - SHE can't gve up all fats, it is very strongly advised against - it is just advised she stay away from WHOLE fats - drink lower fat milk and cheeses instead of the full fat - things like this, but not to stay away from ALL fats at all, that is very bad for her -- for ME, I have to stay away from the carbs, or at least watch them so very close. So while all of you are right, all of you are wrong too --- lmao

So there -

Seriously though, I am taking in all of this and I do appreciate it so very much, you have helped me help my family, and me - and given me tips and ideas that I can get my head and hands around to get me and her on the right track... we're trying to find that happy medium that we are both happy with!

Guacamole is another healthy dip. Some say that avocados are the healthiest food in the world. I like my guac with freshly chopped cilantro, diced red onions, and finely chhopped fresh jalapenos. Mash up the avocados, add the other stuff, maybe also add a couple pinches of sea salt or kosher salt, squeeze a lime over the top, and put it in the fridge for like 30 minutes or so. Good stuff.

Quinoa is another food you should consider. Im sure if you google it you can find tons of good recipes.

Also maybe get a big thing of flax seeds. Tons of health benefits. I like to add a tablespoon to my cereal or oatmeal every day.

I LOVED Guacamole back in the 80's... Shortly after I discovered how great it was I ate so much one night I got sick...

Oh the horror... I have thrown up before and since then but NEVER like that! That shit was glowing in the dark flying around the room like Green Alien Ghosts... I somehow managed to throw up 5 times more than I had consumed!

I havent been able to eat it since then... although I KNOW it was so damn good!

Another idea for getting ideas is to get a few really nice cookbooks which focus on healthy eating, put them on the coffee table, and then maybe tell your kids something like "Hey, I got these really cool cookbooks. They're on the coffee table. Feel free to look through them and tell me what you think looks good and I'll try to cook it one day."

I don't have kids so don't know if something like that would work but I do know that when I was living with my ex-gf about 10 or more years ago, we had a cookbook from The Spa at Doral and a signed copy of one of the first Jamie Oliver books on our coffee table and when people came over, they would natually flip through one of the books and say 'Ooh, this one looks good'. It gave us some pretty good ideas. Very helpful because it can get stressful to pick out new stuff on your own all the time.

Yup, this is exactly what I am going thru here - we've eaten a certain way all of our lives and for the MOST part I eat pretty damn good - not perfect - but good enough to keep Diabetes at bay and not have an issue with it. But now this is a whole new ballgame - so learning a new way again and knowing what is at stake for her if I don't get this right is pretty damn stressful.

I have a boatload of cookbooks and we look at them all the time - now I'll just have to go get some of these healthier ones geared more towards her.

I did raise my kids to all eat fruits and veggies, which in this day and age is a task on it's own - but I can buy a bag of fruits or veggies and never throw that away - but chocolate, sweets and the like, that goes bad here more than anything else - from the time they were old enough to eat from a spoon, I was mashing up fresh asparagus, broccoli, cauliflower, and all those things kids never like - so imagine the look on waitresses faces when my kids would order a steak, potato and a salad over chicken nuggets and fries - those are snacks - not food. lol

THANKFULLY all of my kids know how to cook too - that was a must, to be able to feed themselves when they left here.

I think the reason this is so frustrating is because it is my daughter, if not for that, I wouldn't be in such a panic, but the least little thing is making her very sick - and we love trying and experimenting with new things -

Salad on a sandwich, that's a new one - and she LOVES salads, that's one of her goto things - she may love that!! Thank you!

Milk is filled with sugar which are also carbs and not a great source of healthy fats by any means. I would stay away from dairy all together and have your daughter get her healthy fats else where. Salmon, tuna, even red meat in moderation. Supplementing omega's is also a great way to get your daily intake.

I get bored of eggs in the morning all the time so I have been doing this. Ground Flax Seed, handful of almonds, a few blueberries, and some Whey protein. Makes a good cereal.

We have moved to Skim milk, or in the process of it - this is the one thing, we seem to bounce like a damn ball, one says drink whole, next says drink lowfat/skim and so on - we have gone thru this for so many years and everyone seems to say something different.

WHATEVER kind of milk we drink, it is all organic now, it has made even my lactose intolerant ones feel better AND doesn't expire 2 days after we get it.

Oh my god - my husband has been reading this too and he made some fajitas today for lunch - he used coconut oil for heating the shells in a skillet - made homemade pico - all fresh - and roasted a very lean roast all night in the crock pot - wow - this was awesome and that oil made those shells so much less OILY!!

I am not a fan of Mexican food in general - but this was REALLY good - and I don't eat cheese much - so that was less fat for me - lol

If its that small of an amount its not bad. As for cereal....carbs and sugar city...no thanks! Ezekiel toast with coconut oil and egg whites for me. Or steel cut oats cooked with some cinnamon, walden farms no calorie syrup and egg whites on the side.

I just have to clean up some of my part - for the most part, we don't eat near as bad as some but a lot worse than others - we are just somewhere right up the middle. My favorite kind of cereal is whole wheat - shredded wheat - and things like that - there is maybe one or 2 that I eat with sugar - but for the most part, I like wheat and whole grain cereal - and steelcut oats are my favorite - cinnamon and brown sugar is perfect.

I am thinking after all of this, I don't eat THAT bad afterall - just cleaning it up a bit - and got some amazing ideas and some have already been implemented and my whole family is better for it already.

if your daughter likes pasta, try this:

dice up chicken, broccoli, garlic, chilies ( if she likes it )
start cooking the chicken on a little butter or oil
grab another pan and boil some salted water, once its done, put some rice noodles in



and put the chopped broccoli in at the same time


by this time the chicken is ok, so put he garlic in and the cillies
now add 2 tablespoons of dijon mustard and some thyme and add some cream to it

drain the pasta and the broccoli and add it to the chicken - now the cream will coat the pasta nicely

add some Parmesan to it


the reason why it's a good recepie is because the broccoli is always good, the rice pasta is much better than the wheat alternative, and if you put Parmesan on, its gonna be less cheese than any other kind

if you like you can add blue cheese to the sauce


also if you like sandwiches, switch brad to wraps - you tend to put more green leafs into salads

eat 2 courses, first being a soup - that will fill you up

You don't eat unhealthy. But I feel like your balance of protein/fats/carbs is off in your meals. up the proteins and watch those carbs...steel cut oats + sugar
